Beef with Green Peppers and Tomato

Level of Difficulty:
Preparation time: 30 minutes

Ingredients:
1 pound beef flank steak
4 small tomatoes
1 medium green pepper
1 shallot
2 teaspoons cornstarch
2 teaspoons sugar
2 teaspoons vegetable oil
2 teaspoons light soy sauce
Vegetable oil for stir fry
Salt

Preparation:
1. Thinly slice flank steak into 1" long strips.
2. Add cornstarch, sugar, oil and soy sauce to beef and mix well, set aside.
3. Rinse and cut tomatoes into small chunks.
4. Rinse and cut peppers into bite size pieces.
5. Finely chop shallot.

Cooking instructions:
1. Heat one tablespoon of oil in wok with a sprinkle of salt.
2. Add chopped shallot and cook about 10 seconds in oil.
3. Add beef and stir-fry about 4-5 minutes until cooked. Remove from wok and set aside.
4. Heat one tablespoon of oil in wok.
5. Add peppers and tomatoes to oil and stir-fry for 3 minutes. Cover and let cook another 5 minutes.
6. Mix in beef and stir well.
7. Adjust taste with a little more soy sauce or sugar as desired.
8. Serve over rice or noodles or with bread.

Makes 4 servings.
