Stir Fry Chinese Water Spinach

Level of Difficulty:
Preparation time: 20 minutes

Ingredients:
1 bunch Chinese water spinach
1 teaspoon vegetable oil
Seasoning: 1 teaspoon shrimp paste or 1 cube of bean curd
Pinch of salt

Preparation:
1. Trim and discard 2" from ends of spinach.
2. Wash well and cut into 6" long strands.
3. Finely chop garlic.
4. If using bean curd, gently rinse in water, drain, and mash

Cooking Instructions:
1. Heat vegetable oil in wok with a sprinkle of salt.
2. Add garlic cook about 10 seconds.
3. Add spinach and stir-fry about 1 minute, cover and cook another 3 minutes.
4. Mix in shrimp paste or bean curd and stir well.

Makes 4 servings.
